The knives fly as two teams of local butchers go head-to-head on quarter steers from Marin Sun Farms to see who’s got the fastest and cleanest cuts this side of the Mississi
ppi (ok, Sierra Nevadas.) Teams have just under a half hour to complete the cut list as defined by the panel of expert judges. The butchered meat will be packaged on site and sold through a Bay Area meat CSA. Emceed by Eat Real founder Anya Fernald, this promises to be one cutting edge night. Saturday 7pm, main Eat Real stage.
